E’ Primavera?

The spring interns have arrived! The group of 8 jumped right in to their jobs, getting to know their supervisors, and learning their way around Spannocchia. After a very warm winter without any snow to speak of, we woke up this morning to tiny white snowflakes falling from the sky. Although a few of the animali crew still had to brave the cold, wet weather to feed all the animals on the property, everyone else headed inside.
Here are some pictures of the garden interns Katie and Dana making Limoncello with Daniela from our organic lemons (the lemon trees are housed in the limonaia during the winter) and animali intern Theron helping Davide and the Butcher Piero transform our Cinta Senese pigs into prosciutto and other traditional salt cured meats. A presto!
