Description:
While a participant at the Spannochia Symposium last February, I was completely amazed at the spirit of the whole group and what a positive experience it was meeting so many wonderful Italian cooks and producers.
I decided to put together a trip so my cooking class students could come to Italy and meet them, and have them share their passion for cooking and sustainability. We will visit vineyards, take cooking classes, meet slow food chefs, and visit olive oil and cheese producers.
Coordinator Biography(ies):
Chef Doug Mack and his wife Linda Harmon, have owned and operated the Inn at Baldwincreek, and Mary’s Restaurant in Bristol, Vermont for the 27 years. Doug was the founding president of the Vermont Fresh Network, a statewide organization which links farmers and chefs. In addition to running the inn and restaurant, Doug manages 5 hoop houses and vegetable gardens, which supply the restaurant with vegetables and produce year round. The Inn’s cooking classes begin in the greenhouse to teach students the true meaning of sustainability.
