For the third year, we are excited to offer our popular A Tavola food and wine culinary program at Spannocchia!

In Italian, a tavola literally means “at the table” or a command “to the table!” This concept is fundamental in the Italian culture because the table is where everyone meets to break bread, share laughter and stories, and deepen connections – it is as much about feeding your body as it is about feeding your soul.

Our A Tavola program in Tuscany combines a balanced itinerary of cooking classes and field trips and visits to local artisans, small organic farms, nearby Tuscan villages and Siena, and intimate restaurants steeped in tradition.  There is plenty of relaxation to be had on the grounds of your home site – Castello di Spannocchia, an organic agricultural estate nestled in the hills of Tuscany.

You will explore the rich history of Tuscany and its landscape of olive groves and vineyards by sampling locally produced cheeses, salumi, wines, olive oil and honey.  Learn first-hand how to prepare the simple regional favorites of Tuscan cuisine such as panzanella (bread salad) and ribolitta (a hearty soup) with tips and techniques from our local cook, Loredana Betti.

Experience your food in its natural setting sourced seasonally from the gardens of Spannocchia, where traditional methods preserve the ancient landscape and provide the kitchen with a fresh, flavorful harvest. Yago, our garden manager, is a horticultural powerhouse and will explain the farming systems that make Spannocchia’s vegetable gardens so unique and plentiful.  And no culinary visit to Tuscany is complete without a salumi e prosciuttotasting!  Try Spannocchia’s traditionally cured pork products and learn about their practice of preserving and raising organic, free-range breeds.  By the time you depart, you will be well versed in Tuscan flora, fauna, wine, food, and the delicacies that all play a part in the magic of Italy and the lure of Spannocchia.

COST: In Villa (with private bathroom) in double room, 1600 euro per person, Single room, 1800 euro per person. Maximum 12 people.

Includes all cooking classes, transport upon arrival, field trips, activities at Spannocchia, visit to local farmers/producers, room and board.

Program costs not included: Airfare. Individuals will be responsible for purchasing their own flights. NOTE: Please check with the group coordinator prior to booking a flight to ensure proper arrival time.
