2025 Anniversary Event: June Virtual Cooking Class

Held on Wednesday, June 25, 2025, this virtual program focused on “Traditional Preserves from Spannocchia” in celebration of June’s monthly theme, Culinary Products & Traditions. 

Spannocchia’s Activities Coordinator and instructor of our cooking classes, Laura Capalbo, taught us about different ways to preserve seasonal products, focusing on three classics from Spannocchia: passata (tomato puree), marmellata (jam), and nocino (walnut liquor). We learned techniques and tips used at Spannocchia, heard about how to incorporate these traditional foods into recipes, and more.

Laura Capalbo first arrived at Spannocchia in the summer of 2019 as the inaugural Culinary Apprentice, and then returned to live and work at Spannocchia almost two years ago. In that time, she has become an integral part of the Spannocchia team, bringing her wonderful range of culinary experiences, hospitality, and project management to various facets of our work. Most notably, she recently wrote our new cookbook with Daniela, and worked closely with Silvia and artist Linda Warner Constantino on layout, design, and production.

If you are lucky enough to take a cooking class at Spannocchia, or eat in the restaurant on a Monday night, you’ll have the opportunity to benefit from Laura’s talents. In the meantime, you can watch the recording from our June program celebrating Spannocchia’s culinary traditions!
