Pomodori Gratinati | Baked Tomatoes

Ingredients

Makes 6 servings

8 ripe and firm tomatoes

200 gr. white bread with crusts removed

Parsley

2 tbsp capers

2 cloves of garlic

2 anchovy filets

3 tbsp olive oil

Salt & pepper

Instructions

Preheat the oven to 350°F.

Cut the tomatoes in large slices about 1/2 inch in thickness (or in half if the tomatoes are small). 

Combine all the other ingredients in a food processor and blend until mixed well.

Line a baking sheet with parchment paper and lay out the tomato slices on the paper.  Spread the mix on the tomato slices and bake in the oven for 30 minutes.

Buon appetito!
